If you just want to stay off the freeways and don't mind taking the time.
This is one of my favorite day-long runs. Have breakfast in Eagle, and enjoy some nice twisties on Hwy 55 on the way to McCall. Have lunch in McCall, and relax on some nice open roads on Hwy 95 on the way back to Eagle. If you are getting tired, just jump on I-84 past Parma, otherwise take 52 through to Emmett, and 16 back down to Eagle. Take your time, get off the bike occasionally and enjoy the river and woods. A good run would take me 6-7 hours.
Leaving Grangeville on ID13 it quickly joins ID14 for a fun, twisty climb to Elk City.
Running south from Grangeville, the US95 is a typical beautiful Idaho road with subtle elevation changes and some lovely corner combinations
Hells canyon is a very narrow extremely twisty road along the snake river. A boring country section in the middle then the final decent into Clarkston is spectacular.

Fantastic selection of sweepers, climbing and falling with good surface with great views of the Salmon River Valley. Surely one of the best roads in this area.
Needing to make tracks from Idaho to Reno I discovered this very pleasant little route. Hwy 51 runs out of MH across the Snake River. It's desolate and mostly straight till you get to the border. There's a nice canyon carver there thru BLM land there with signs warning "Wild Mustang Crossing." Then right before Elko there's a great section of high speed sweepers. I liked 'em so much I turned around and rode them again! Nice surprise.
Great road, loads of corners (all kinds) and virtually no one around. A real treat.
Streams, forests, mountain views, nice selections of corners, all these make a for a good road! Recommended

Nice alternative to the interstate, the old US30 and the scenic byway part, note you need to traverse the interstate near the start.
Fantastic Moon Monument Craters, long straights and nice corners, interesting and varied, what more could you want :)
There are few fuelling points on this route, so beware.
